Delicious Spinach Ricotta Brunch Bake Recipe

Spinach Ricotta Brunch Bake is the perfect weekend brunch casserole. This dish can be made ahead and will impress guests.  

– 2 sheets puff pastry – 6 eggs  – 1 cup ricotta cheese – dash hot sauce – 1 cup spinach  – 6 slices bacon  – 1 medium red bell pepper

Ingredient

Preheat oven to 400°F. Prepare a 9-inch springform pan with cooking spray. Unfold thawed puff pastry sheets carefully.

Roll one into an 11" square and the other into a 12" square. Line the bottom of the pan with the 12" sheet. Reserve 1 tbsp of lightly beaten eggs.

Combine the remaining eggs, ricotta, spicy sauce, and spinach. Half the ricotta mixture, bacon, cheese, and peppers should go on the puff pastry in the pan.

Repeat with remaining ingredients. Fold the edges of the remaining puff pastry sheet to secure the filling.

Brush the pastry with your saved tbsp of egg and bake for 1 hour until golden brown.

Cool it in the pan for 10 minutes, then loosen the edges with a butter knife. Slice and serve.
