Easiest Amaretti Cookie Recipe

Amaretti Cookies with almonds are a Christmas favorite. These soft, chewy gluten-free cookies are a holiday staple made with a few easy ingredients!  

– 2 ⅔ cup almond flour – 1 cup sugar – 1 tablespoon lemon zest – 3 large egg white – 1 teaspoon almond extract – ¼ cup sugar

Ingredient

Heat the oven to 325°F. Parchment two baking sheets.  Mix almond flour, 1 cup sugar, and lemon zest in a large bowl. Whisk well.

Add egg whites to the mixer bowl and beat until soft peaks form. Mix in almond extract.

Egg whites should be gently folded into dry ingredients to moisten the dough.

Scoop equal amounts of dough with a tiny cookie scoop and roll into balls with damp hands.

Turn through the remaining ¼ cup of sugar. Put cookies on baking sheets.

Place the baking pans in the oven and bake for 25 minutes until the cookies are slightly browned and the bottom is golden brown.
