Greek Pork Loin Ribs and Potatoes Sheet Pan Dinner—a simple dinner with pork loin ribs, potatoes, carrots, and tomatoes in a garlic-herb marinade.  

– ¼ cup olive oil – juice from 1 lemon  – 2 tablespoons fresh thyme – 3 tablespoons fresh oregano  – 6 cloves garlic  – ½ teaspoon salt – ¼ teaspoon pepper – 1½ pound baby potatoe – 1 pint cherry tomatoe – 1 large carrot  – 2 pounds pork loin rib


Turn the oven on to 400°F. Mix the olive oil, lemon juice, thyme, oregano, garlic, salt, and pepper in a small bowl.  


Toss the potatoes, tomatoes, and carrots thoroughly after adding half of the marinade to them.  


Toss the meat with the remaining marinade. Place the potatoes and meat in a baking sheet arrangement.  


Bake for 30 to 45 minutes, or until the potatoes are soft to the fork and the pork is cooked to your preference.
