Simple 3 Ingredient Healthy Energy Bar Recipe 

Three Ingredient Healthy Energy snacks—these tasty snacks are easy to create and require no cooking. Pulse, chill, and enjoy.  

– 1 cup peanut – 1 cup dates  – 1 cup dried apricot


Process nuts, dates, and apricots. A few pulses will break them apart. If dates group, separate them.  


Process for another 1-2 minutes until the contents clump and form a ball. Scrape the bowl edges if needed.  


Put a baking sheet-sized piece of parchment paper on your work surface. Compress the dough into an 8" x 8" square using your hands.   


It was easy to smooth using a rolling pin. Wrap it in plastic and chill for an hour or overnight.  


Remove the cold power bar dough to a cutting board. As desired, cut into 8 large bars or 16 little squares. Wax or plastic wrap each bar.
