Super One Pot Chicken Sausage Rice Enchilada Recipe 

One-Pot Chicken Sausage Rice Enchilada—a one-pot miracle made with rice, vegetables, chicken and sausage.   

– 1 tablespoon olive oil – 1 chicken breast  – 1 chorizo sausage – 1 onion  – 3 cloves garlic – ½ red bell pepper – ½ green bell pepper  – 2 tablespoon canned jalapeno  – 10 ounce enchilada sauce – 1 cup rice – 2 cups chicken broth – 1 cup cheddar cheese


Heat olive oil in a big saucepan or dutch oven, then add chicken and sausage. Chicken should be pink-free.  


Add the onion and garlic and sauté until transparent, about two more minutes. Add bell peppers and jalapeno and simmer for 2 minutes.  


Mix rice, enchilada sauce, chicken broth, and salt & pepper. Not much salt, just 1/2 tsp black pepper.   


Boil and simmer on low until rice is done and sauce is almost gone. Stir in ½ of the cheese.   


Sprinkle remaining cheese on top and broil for two minutes until melted. Add tomatoes, cilantro, avocado, and green onions.
