Fajita-Stuffed Chicken Recipe

Served with crispy bacon, these chicken fajita bombs contain seasoned chicken, peppers, and onions.  

– 2 Tbsp. canola oil – 1 red pepper (diced) – 1 green pepper (diced) – 1 yellow pepper (diced) – 1 onion (diced) – 1 tsp. kosher salt – 1 tsp. freshly ground black pepper – 4 oz. cream cheese – 1/2 cup shredded cheddar cheese – 1/2 cup pepper jack cheese (diced) – 3 boneless, skinless chicken breast – 2 tsp. salt – 2 tsp. chili powder – 2 tsp. cumin – 2 tsp. garlic powder – 3 Tbsp. canola oil – guacamole – salsa – sour cream

Ingredients

High heat olive oil in a pan. Caramelise peppers, onion, salt, and pepper. Stop cooking.

In pan, mix cheddar, pepper jack, and cream cheese.Season chicken with salt, chilli powder, cumin, and garlic powder.

Cut a chicken pocket horizontally and dump fajita stuff inside.
